Sorshe Ilish Recipe (Serves 3–4)
Ingredients

Ilish (Hilsa) fish – 6–8 pieces

Yellow mustard seeds – 3 tbsp

Black mustard seeds – 1 tbsp
-
Green chillies – 4–6 (adjust to taste)

Mustard oil – 4–5 tbsp

Turmeric powder – ½ tsp
-
Salt – to taste

Water – as needed

Preparation

Marinate the fish
Rub ilish pieces with salt and turmeric. Keep aside for 10 minutes. -
Make mustard paste
Soak yellow & black mustard seeds in water for 15 minutes.
Grind with green chillies into a smooth paste (not bitter).

Cooking Method

Heat mustard oil in a pan till it reaches smoking point, then reduce heat.

Add the mustard paste carefully and cook for 2–3 minutes till oil separates.

Add turmeric, salt, and a little water to make a gravy.

Gently slide in the ilish pieces.

Cover and cook on low flame for 6–8 minutes.

Drizzle 1 tsp raw mustard oil on top and add slit green chillies.

Switch off the heat — do not overcook.
